Nothing beats Kitchenaid for their mixers - along with my massive 20 qt mixer I have two Kitchenaids - a 6 qt and a 4.5 qt - they beat batters and buttercream for hours, they are beasts! After years and years of spinning those paddles they never let me down. I had one glitch when a metal clip snapped off which held the bowl in place on my 6 qt. Customer service number right on my machine and boom, they sent me the part completely free of charge - not even a shipping cost! LOVE KITCHENAID
You probably don't need 2 mixers to start - but if you can afford to go to the larger size of 6 qt it is worth it.

3. Cake Pans, 2 of each if you can afford to as it will make your time much more efficient - sizes 6" x 3", 8" x 3", 9" x 3" and 10" x 3" should be a great starting set. In the photo I have a 2" high pan and a 4" high pan - don't bother with those! I put them in to show you the difference. 3" high pans are ideal to give you deep enough cakes that you can tort. 2" are too shallow and cakes can get super dry or burnt, 4" are too deep and end up with soggy middles. Fat Daddios brand rocks for great pricing and quality. These have baked a million cakes and still look great! Great pricing on the set of 3, buy 2 sets and add in two 9" pans if you like cakes that size too.

4. What the heck is this hideous thing?? I know, super ugly, so sorry - but this is a cake wrap and it is genius.
To prevent your cake from being overcooked on the outside and undercooked in the middle, you soak these in water and wrap around your tins. They attach with velcro. The outside then cooks slower. For cakes 9" or more, a great tip is to get a tin can, cut off the bottom so you have a tube, soak off all the paper wrap of course and insert into the centre of your batter filled pan. The metal attracts more heat to the centre so your cake cooks evenly. Using both of these methods creates perfectly baked cakes :) Regency Wraps Cake Strips - Standard - Velcro
This one you will have to go to a hardware store for - Home Depot, Rona - any place will have ABS pipe.
